finger knitting? like crochet without the hook, you just keep 
looping through the last loop. or a knitting dolly/mushroom 
(basicly a spool with 4 nails that you loop the yarn over to 
make I-cord). my 3 year old wants to learn to spin...

 rubber stamping. cutting up old holiday cards to make balls 
(cut the card into 6 or more evenly sized strips, hold 
together top & bottom with a brad & fan into a ball), pompom 
animals, cinnamon dough ornaments...
