My son keeps wanting to learn to knit, but isn't really ready (same
patience issue).  He started doing rug hooking last year when he was
6, you may want to wait on that as well but in a year or so you can
give it a try.

I remember learning finger crocheting from my grandmother when I was
little.  If you can get him to do spool knitting, i-cord makes a great
handle for a bag.

Felt balls are fun -- take wool and dish soap and warm water and just
kind of mush it around until it felts.  (You can find more technical
instructions on Google.)
